What better start to a meal than a beautiful homemade soup? This sweet potato soup recipe is tasty, full of goodness and even if you have never made your own soups before it is so quick and easy to make that you cannot go wrong.
Check the ingredients on canned soups and you will find thickeners, additives and lots of salt. All that we will put into this recipe is fresh vegetables, a little good oil and some homemade stock. It is guaranteed to set the digestive juices flowing with its delicious scent and appearance.
Peel, slice and dice the following vegetables
Also required: groundnut or olive oil and vegetable or chicken stock
Heat a little groundnut or olive oil in a heavy based saucepan. Chuck all the vegetables in and stir then around so they are coated. Cook for about 5 minutes.

Pour in 1 and a half pints of homemade vegetable or chicken stock and bring the pan to the boil. Then turn down the heat and simmer until the vegetables are tender, which will take about 25 minutes. Season with a little freshly ground sea salt and black pepper to taste.

Let it cool down slightly, then pour into a blender or liquidizer and puree for a couple of minutes.
Serve and enjoy!
Variations I like to pop in any left over rice or millet from the day before, just before the vegetables are cooked. The grains are already cooked they just need heating through. This adds a little more goodness to this already nutritious, sweet potato soup.
